Amarapayar Mezhukkupuratti – Stir Fried Hyacinth Bean

Amarapayar or Amarakka Mezhukkupuratti is a vegetarian side dish usually served along with rice. Amara Payar is a member of legume family, commonly known as Hyacinth bean or field bean. You can find more details about the legume here:

  1. Amarapayar – 250 gms
  2.  Onion – 1 small, sliced thin
  3. Dry red chillies – 3
  4. Garlic – 6, finely chopped
  5. Turmeric powder – 1/4 tsp
  6. Chilli powder – 1 tsp (adjust according to your spice level)
  7. Mustard seeds – 1/4 tsp
  8. Curry leaves – 1 sprig
  9. Coconut oil – 2 tbsp
  10. Salt – as required


  1. In a kadai, heat coconut oil and sputter mustard seeds.
  2. To it, add dry red chillies, garlic, curry leaves and onion. Saute till the onion turns brown in color.
  3. Add some salt, turmeric powder, chilli powder and mix well. Make sure the flame is is on low.
  4. Add the chopped amarapayar and mix everything.
  5. Sprinkle little water.
  6. Cover and cook till the amarapayar is soft.
  7. Serve with rice.
