In a Kerala banquet, Aviyal or Avial is one such dish which cannot be avoided. This is a simple dish where vegetables are boiled and then it is mixed with tamarind extract and grated coconut. It makes an excellent combination with parboiled rice.

In some areas, instead of tamarind, people use curd or mango. Some people make it as a dry dish and some people prefer a little gravy in it. Again, the use of chilli powder and turmeric powder is also optional. Instead, only green chillies or pepper powder is used. So that means, you will find many variants for this particular Sadhya dish.

INGREDIENTS

  1. Ash Gourd / Kumbalanga – 1 cup, cut into 2″ long strips
  2. Yellow Cucumber/ Vellarikka -1 cup, cut into 2″ long strips
  3. Snake Gourd / Padavalanga -1 cup, cut into 2″ long strips
  4. Carrot -1 cup, cut into 2″ long strips
  5. Green Beans – 1/2 cup, cut into 2″ long strips
  6. Potato -1 cup, cut into 2″ long strips
  7. Green Plantains / Kaaya -1 cup, cut into 2″ long strips
  8. Elephant Foot Yam / Chena -1 cup, cut into 2″ long strips
  9. Drumstick – 2, cut into 2.5″ long strips
  10. Tamarind – a small gooseberry size or 13 gm
  11. Grated coconut – 2 cups
  12. Cumin seeds – 1 tsp
  13. Green Chillies – 4 numbers
  14. Curry leaves – 2 sprig
  15. Turmeric powder – ½ tsp
  16. Chilli powder – 2 tsp
  17. Salt – As required
  18. Water – 1 cup
  19. Coconut oil – 3 tablespoon

METHOD

  1. Soak tamarind in 1/4 cup warm water. Take the extract and keep it aside.
  2. Crush together grated coconut, cumin seeds and green chillies. Keep it aside.
  3. In a thick bottomed vessel, take vegetables listed from 1 to 9, curry leaves and coconut oil.
  4. Add salt, turmeric powder and chilli powder. Mix thoroughly.
  5. Add 1 cup water. (Add more water if you feel it is not enough. Take take not to overcook the vegetables.)
  6. Cover and cook the vegetables till half-done.
  7. Add the tamarind extract and boil.
  8. Add the crushed coconut and mix well.
  9. Serve with rice.

TIPS

  1. You can substitute tamarind with curd or raw mango.
  2. Instead of chilli powder, you may add more green chillies.
  3. Turmeric powder is optional, you may avoid if you don’t prefer the yellowish tint.
