Pork Ularthiyathu or Pork Ularthu is a spicy dry dish that is commonly served with boiled rice. Try this Kerala Style Pork Ularthu recipe for this years Christmas and let us know your feedback.

INGREDIENTS
- Pork – 1 kg
- Ginger – 1 tbsp, crushed
- Garlic – 1 tbsp, crushed
- Shallots – 1 cup, sliced
- Onion – 1/2 cup, sliced
- Green Chillies – 3 numbers, slit
- Turmeric Powder – ½ tsp
- Kashmiri Red Chilli Powder – 1 tbsp
- Coriander Powder – 2 tbsp
- Ground Masala – 1 tsp (See ‘To roast and grind section’)
- Coconut Bits – ½ cup
- Curry leaves
- Lime juice
- Salt
To Roast and Grind
- Dried Red Chillies – 10 numbers
- Coriander Seeds – ¼ cup
- Cinnamon – 1″ stick
- Cloves – 6
- Cardamom – 5
- Bay Leaves – 1
- Star Anise – 1
- Crushed Pepper Corns – 1 tsp
- Fennel Seeds – ½ tsp
For Marination
- Turmeric powder – 1/2 tsp
- Ground Masala Powder – 2 tablespoon
- Ginger – 1 tbsp, crushed
- Garlic – 1 tbsp, crushed
- Salt – 1 tsp or as required
- Lime Juice – from 1/2 lime
METHOD
- Dry roast the ingredients listed for grinding and allow it to cool. Once cooled, grind it into fine powder. The quantity of mentioned for the masala powder will make enough masala for 2 to 2.5 kg Pork Ularthu.
- Marinate 1 kg Pork meat with the ingredients listed for marination. Keep it marinated for at least 1 hour.
- After 1 hour, pressure cook the marinated pork. No need for adding water as the pork meat will release water while cooking. Well, if you are doubtful, you may add 2 or 3 tbsp of water as a precaution to avoid burning. Cook in a low flame for first 5 minutes. Then, turn the flame to high and cook for 4 to 5 whistles. Let the pressure settle completely before opening it. You can store the water and melted fat in fridge for couple of days. You can use it while making Kappa or Ghee Rice etc.
- Heat a kadai and add 3 tbsp coconut oil.
- To it, add ginger, garlic and curry leaves. Saute for a couple of seconds till the raw smell is gone.
- Add shallots, onion, green chillies and 1 tsp salt. Saute till the shallots and onions are well cooked.
- Add turmeric powder, kashmiri chilli powder, coriande powder, ground masala powder. Mix well and cook for 1 minute.
- Add cooked pork and mix well.
- Cook in a medium flame till the gravy is completely dried and the pork meat has turned dark brown. It will take approximately 10 minutes. Check salt in between and add if required.
- Finally, add 2 tsp pepper powder and mix well.
- Pork Ularthiyathu is ready. Serve with Rice, Appam, Puttu, Idiyappam etc.
